The demo records harmless shoreline fish alongside hostile creatures. Walking past them is easy because they are not a combat obstacle. Defeating the major encounters therefore does not prove that every journal category is complete.
Check the shoreline
Equip a suitable throwing option such as the Dagger Belt. Find a clearly visible fish and throw from the shore rather than swinging a sword at the water. Let the weapon recharge before another attempt. Inspect the journal after the kill so a registered entry is distinguishable from a missed hit.
